TomatoDry is a social venture based in Benin that addresses high post-harvest tomato losses during peak production seasons. The project uses low-cost, eco-friendly solar drying technologies to dehydrate fresh tomatoes and transform them into shelf-stable dried tomatoes and tomato powder. By relying on natural energy sources and gentle drying methods, TomatoDry preserves nutritional value, flavor, and food safety while extending shelf life without chemical preservatives. The venture works closely with smallholder farmers, particularly women and youth, to reduce waste, increase incomes, and improve market access for surplus tomatoes. TomatoDry responds to growing demand for healthy, locally processed food ingredients from households, restaurants, and food processors. Through sustainable processing and local value addition, the project contributes to food security, climate resilience, and green job creation in rural communities.
