Joyce Lu studied Anthropology and Biological Sciences with a specialization in neuroscience at the University of Chicago. She is especially interested in health and science education and making STEM fields accessible at an early age. She has worked with various groups at the planning, development, and teaching phases of education initiatives in a wide range of fields that includes neuroscience, nutrition, and women’s health in her hometown of Athens, Georgia, the Chicago South Side, to the western highlands of Guatemala. Joyce takes her passion and experiences in education to MealFlour, which aims to not only provide healthy diets through nutritional supplements and economic empowerment, but also through education about the importance of and best way to achieve and maintain a healthy diet.
